2018 Evermore Old Vines Cabernet Sauvignon
From very old vines in three of Washington’s most celebrated vineyards: Dionysus (1973), Boushey (1980 and Gamache (1985), the 2018 Evermore shows Washington State’s signature density and power with layers of sublime earthiness. Very pure, with a sleek and extremely focused core of cassis, black cherry and blackberry gushing through, framed along the edges with savory, sweet bay leaf and black tea details. Beautiful stony minerality laces everything together, but riveting acidity and dynamic tension should carry this for many, many years in the cellar. Full, yet precise.
Food pairing: Beef or Wild Mushroom Wellington
Movie Pairing: It’s a Wonderful Life
FOUNDERS’ NOTES:
If they made 100% cabernet sauvignon in Pauillac, it would taste a lot like Evermore. Elegant with all the stuff, not too much. We poured the lovely 2014 at the Wine Spectator New York Wine Experience to rave reviews. Also, really tasty.
