2020 Ethereal OV - Blanc de Blancs
We are proud to release the first vintage of Ethereal, a Blanc de Blancs sparkling wine made from 100% Old Vine Chardonnay from Gamache Vineyard. It's elegance and expressiveness are a tribute to the growers and our winemaking team and is something we have imagined would be a great way to celebrate our 20th year in business. While our expectations were always high for this labor intensive, patience required project, this beautiful effervescent classic bubbly surpasses them in every way.
Like a table at a hard-to-get-into restaurant, this special sparkling wine is very limited in production and availability. Less than fifteen cases remain from the premier dégorgement.
Successive disgorgements will be made available at future dates until it is all in the hands of our bubble lovers. We will let you know as soon as future disgorgements are ready!
2020 Ethereal Vines Blanc de Blancs leads with a yeasty nose of brioche, toasted hazelnuts, lemon zest, and green apples. Tiny bubbles dance on the palate opening bright layers of poached pear and quince, pastry cream, Asian spices and candied ginger. This bubbly is sculpted by a vibrant acidity that's seamlessly knit to the plush, silky mousse and chalky underpinning. The acidity frame will help this wine develop in the bottle for years. From old Chardonnay vines planted in 1985 at Gamache Vineyard.

Ethereal was added to our portfolio to celebrate the 2020 vintage. Sourced from remarkable gnarly old Chardonnay vines, planted in 1985 at Gamache Vineyard, Ethereal is a classic expression of sparkling wine, sure to please even the most selective bubbly lovers.
Bottling:
Aged 2 years in barrel and tank, then 20 months in bottle. Bottled September 2022 and disgorgement began May 2024.

"The 2020 ‘Ethereal’ was stored for two years in the barrel and then 20 months in bottle before disgorgement. The palate is fresh and lithe with a soft mousse. Salty minerals combine with Japanese pear and starfruit notes on the palate. Drink 2025-2030"
