Tasting notes

2022 as you wish Old Vines Sauvignon Blanc attacks with a nose of fresh flowers, stone fruit, grapefruit, melon and petrichor leading to ripe, bright flavors of lemon zest, crushed stone, guava, and fresh herbs. The high acid frame will help this wine develop in the bottle for years. From old vines planted in 1985 at Gamache Vineyard, an especially gorgeous wine.

Food pairing: Dungeness crab and lemon butter or asparagus and goat cheese quiche.

Movie pairing: The Princess Bride, duh

FOUNDERS’ NOTES:
as you wish was added to our staggering* portfolio in the 2017 vintage. Relatively little old vine sauvignon blanc remains in Washington State, so we are privileged to gain access to this old block farmed by the stellar vineyard team at Sagemoor Farms.Sourced from remarkable gnarly old vines, planted in 1985 at Gamache Vineyard (as I was working in the dining room at Commander’s Palace in New Orleans), as you wish is a unique expression of sauvignon blanc, sure to astonish even the most erudite wine lovers. 

My Mom was a librarian for many years and The Princess Bride was required reading in our home. One night at Michael's in LA in 1986 I was waiting on Norman Lear and Rob Reiner. They decided to make the movie right in front of me. I called home. Kelly loves sauvignon blanc. I love her. as you wish...
